Roasted Brussels Sprouts with Bacon

This recipe of roasted brussels sprouts with bacon is the closest I’ve been able to get to that first delicious bite I ever had brussels sprouts. It was at a company holiday party when I was 27.  With minimal ingredients and non-stick foil lining your baking pan, this is super-easy to pull together and even easier to clean up. If you can manage to get steam-in-a-bag brussels sprouts from your produce section, then this recipe is even easier!

Prep Time 5 minutes

Cook Time 25-30 minutes

Serves 3-4 people

Ingredients

12 oz Brussels Sprouts, trimmed and halved

2 tbsp extra virgin olive oil

1 slice of thick-cut bacon, cut into 1/4-inch strips

Salt and Pepper, to taste

Preparation

Preheat oven to 400 F. Line a baking pan with non-stick foil, or use regular aluminum foil and spray with cooking spray.

On the prepared pan place your brussels sprouts and drizzle with olive oil. Season with salt and pepper, then sprinkle on the bacon. (If you use regular bacon, use 2 slices and cut 1/2-inch thick strips.)

Roast in the oven until the bacon is crispy and the brussels sprouts are caramelized, approximately 25-30 minutes.
