These BBQ cheddar turkey meatballs came about because my husband came back from his annual camping trip with a ton of shredded cheddar and what I could only describe as a jug of barbeque sauce… Target had a good deal on a 3 lbs package of lean ground turkey, so I made ALL the meatballs. Leftovers will keep for about a week in the fridge, and store for up to 3 months in the freezer.

Ingredients
2 large eggs, lightly beaten
1 c each seasoned breadcrumbs and your favorite barbeque sauce
1 tsp each salt, pepper, and garlic powder
3 lbs ground turkey
2 c shredded cheddar cheese
Preparation
Preheat the oven to 400 F, then line 2 sheet pans with either non-stick foil, or foil sprayed with non-stick cooking spray. This will make cleanup so much easier!
In a large bowl combine your eggs, breadcrumbs, barbeque sauce, and seasonings, then mix until it forms a paste. Next, add in your ground turkey and mix with a fork until well combined. Finally, add in your shredded cheddar and mix until pretty evenly distributed.
Using a small scoop or a spoon, start rolling your meatballs and place them on your prepared sheet pans. I wound up with 55 meatballs altogether, so I divided them with 27 on one sheet and 28 on another to avoid overcrowding. Bake for 30-40 minutes, rotating the sheet pans 15 minutes in.
Serve your bbq turkey cheddar meatballs with your favorite side dishes. In my case, that was cheddar mashed potatoes and steam-in-a-bag broccoli.
