I originally made these burgers with caramelized onions and cranberry mustard in the winter. Because of the weather, I prepared them in my cast iron skillet on the stove, however, these will be great if they’re made on an outdoor griddle or grill. At the end of the day, the toppings are the star! I used pretzel buns since my grocery store didn’t have my preferred brioche buns, but use whatever you like!

Serves 4 people
Ingredients
Caramelized Onions
3 tbsp. olive oil, divided
2 large onions, thinly sliced
1 bay leaf
Salt & Pepper
1/4 c. apple cider vinegar
Burger Patties
1-1 1/2 lbs. ground beef
Salt & Pepper
1 tbsp. dried parsley
2 tbsp. Worcestershire sauce
Cranberry Mustard
1/2 c. whole-berry cranberry sauce (from 14-oz. can)
3 tbsp. Dijon mustard
3 tbsp. whole grain mustard
4 brioche buns, split
4 oz. crumbled bleu cheese
Preparation
For the caramelized onions:
In a medium skillet heat 2 tablespoons of olive oil over medium heat. When the oil shimmers add the onions and bay leaf, then season with salt and pepper. Cook, stirring often until softened, about 15 minutes. Add 1/2 cup water, then continue to cook until the water is absorbed and the onions are golden brown (20 minutes). Add the apple cider vinegar and cook, stirring often until absorbed, about 3 minutes. Discard the bay leaf before serving.
For the burger patties:
In a medium bowl, season the beef with salt and pepper then mix in the Worcestershire sauce and parsley. Divide the mixture into 4 portions then form into patties (thinner in the center for even cooking). Place the patties on a plate, cover, and refrigerate for 10-15 minutes until firm. (While the patties are chilling, prepare the cranberry mustard.)
Once chilled, in a skillet heat the remaining tablespoon of olive oil over medium-high heat. Add the patties and cook, turning occasionally, for 8-9 minutes.
For the cranberry mustard:
In a small saucepan, heat the cranberry sauce and 2 tablespoons water over low, stirring until loosened, about 2 minutes. Transfer to a small bowl. Mix in the mustards then set aside.
Putting it all together:
Build the burgers with the bun bottoms, then some cranberry mustard sauce, the patties, then the onions, bleu cheese, more cranberry mustard sauce, and finally the bun tops. Enjoy your burgers with caramelized onions and cranberry mustard sauce!
