Easy Comfort Meatballs

Easy Comfort Meatballs

I love to make these easy comfort meatballs after I had a long, and admittedly bad, day. They take very few ingredients, are readily available should you need to pick up anything at the store, and you can straighten out the kitchen while they bake. More often than not, my kitchen is usually clean by the time we sit down to enjoy these…

Prep Time 10 minutes

Cook Time 45 minutes

Serves 4-6

Ingredients

1 lb 90/10 ground beef

1/2 c each of oats and milk

1/2 tsp each of onion powder, garlic powder, and salt

1/4 tsp black pepper

1/2 – 3/4 c of your favorite barbeque sauce

Preparation

Preheat the oven to 375 F, then line a 9 x 13 baking dish with non-stick aluminum foil, or regular foil sprayed with non-stick cooking spray.

In a large bowl add all of your ingredients, then using clean hands, mix together until thoroughly combined. Next, using a mini scoop or a kitchen tablespoon, as opposed to a tablespoon from your measuring utensils, scoop out your meatballs, roll gently, then place in your prepared dish. I was able to get 17 meatballs out of my mixture, so you can safely expect 16-18 meatballs.

Bake for 25 minutes to firm them up, remove from the oven to pour your barbeque sauce over top, then put back in the oven for another 20 minutes, or until cooked through.

Enjoy these super easy comfort meatballs with some mashed potatoes and, if desired, a little more barbeque sauce!
