I’ve learned I love meatballs and chilis of all kinds… get me some ground beef, turkey, pork, or chicken, and I’ll make you some kind of meatball or chili! These easy Tex-Mex meatballs remind me of eating a bowl of chili in a single morsel. Serve these any way you like! Prep Time 10-15 minutes
Cook Time 40-45 minutes
Serves 4-6 people
Ingredients
2 lbs ground beef
3/4 c breadcrumbs
1/3 c milk
1 tbsp chili powder
1/2 tbsp ground cumin
1 tsp salt
1/2 tsp each of garlic powder, onion powder, and black pepper
2 large eggs
Preparation
Preheat the oven to 400 F, then line a baking sheet with nonstick foil or aluminum foil sprayed with non-stick cooking spray.
In a large bowl combine the ground beef, bread crumbs, milk, chili powder, cumin, salt, garlic powder, onion powder, pepper, and eggs and mix together well with your hands, or a fork. Scoop out 1-2 tablespoon portions and place the meatballs on the lined baking sheet.
Bake at 400 F for 40 minutes, or until cooked through. Serve these easy tex-mex meatballs over rice, with baked potatoes, in tacos, or as appetizers. I chose to serve them over rice with some corn and salsa.
