Malva Pudding

I first saw a recipe for malva pudding in a fashion magazine roughly 10-12 years ago at this point. The article was based around a viewing party hosted by an actress in her apartment with friends. There were fancy drinks, cute little bites, and this malva pudding. As I tested the recipe, it learned the hard way that it was written incorrectly! I re-wrote it to this sumptuous, decedent recipe you see before you. The sauce is what gives this cake-like base it’s bread pudding-like creaminess. This is everything I want in a dessert that doesn’t revolve around chocolate!

Serves 6-8 people

Ingredients

1 1/4 c sugar, divided

2 large eggs

1 tbsp apricot jam

5 tbsp  unsalted butter, divided

1 tsp vinegar

1/3 c milk

1/2 c all-purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 c heavy cream

1/3 c hot water

2 tsp vanilla extract

Preparation

Preparing the Pudding:

Preheat oven to 350 F then prepare an 8 x 8-inch square baking dish with non-stick spray. In a bowl beat 3/4 cup sugar and eggs until thick and yellow, then mix in apricot jam, 1 tbsp melted butter, vinegar, and milk. In a separate bowl combine flour, baking soda, and salt, then pour the dry mixture into the wet mixture and stir to combine. Pour batter into the prepared baking dish and bake in the center of the oven until the pudding has risen and the top is evenly browned; approximately 30 minutes.

Preparing the Sauce:

While the pudding is baking, prepare the sauce by combining the remaining 1/2 cup sugar, heavy cream, 4 tbsp butter, 1/3 cup hot water, and vanilla extract in a small saucepan over low heat. Simmer, stirring constantly until the butter is melted and the sugar is dissolved, approximately 3 to 5 minutes, then set aside. Let the baked pudding sit for a few minutes, then pour the sauce evenly over the top. Let stand for 15 minutes, then serve.
