Peanut Butter Energy Bites

I was looking for easy breakfasts that I could take on my morning commute. Something that (1) won’t fall apart in my work bag, (2) won’t take up too much space, and (3) can be eaten using one hand. These peanut butter oatmeal energy bites are great for a quick grab-and-go breakfast with your morning coffee (Chocolate for breakfast? I’ll take 2 please!) or as an afternoon pick-me-up. There are only 5 ingredients, and depending on the chocolate chips you use, are vegan-friendly!

Prep Time 5 minutes

Set Time 15-30 minutes

Makes roughly 20 Bites

Ingredients

2/3 c creamy peanut butter

1/2 c chocolate chips

1 c old-fashioned oats

1/2 c chia seeds

2 tbsp pure maple syrup

Preparation

Combine all the ingredients in a medium bowl then stir to combine. Place the mixture in the refrigerator for 15-30 minutes so it’s easier to roll. Prepare a baking sheet with some parchment paper or a Silpat, then using either a tablespoon or small ice cream scoop, roll into balls. Place the baking sheet in the fridge for another 15-30 minutes to firm up, then store your peanut butter energy bites in an airtight container in the fridge for up to a week.

Notes

There are many variations you can make off of the base recipe. Feel free to swap out crunchy peanut butter for creamy, add in some shredded coconut, try butterscotch or peanut butter chips in place of the chocolate chips (or a blend of all of them!), substitute flax seeds for the chia seeds, or even swap out the maple syrup for agave nectar or honey. Continue to play and experiment with different ingredients and flavors until you arrive at your favorite.
