Pork Chops with Herbed Gravy

Pork chops with herbed gravy is a stick-to-your-ribs comforting dinner, like a culinary hug. When I made this I had 4 very thick pork chops that were prepared 2 at a time in my cast iron skillet, which is why the cooking time is so long for this recipe (I went 10 minutes on each side). Most of that cooking time is just leaving the pork chop alone. Please note, if you don’t have Herbs de Provence, feel free to substitute any dried herbs you love, like thyme, rosemary, or a combination.

Serves 4

Ingredients

4 tsp all-purpose flour

1 1/2 tsp dried basil

1/4 tsp salt

3 tbsp unsalted butter, divided

4 (1-inch) thick pork chops

1 1/2 tsp Herbs de Provence

Salt and pepper, to taste (to season the pork chops)

1/2 tsp black pepper

1 c whole milk

Preparation

In a small bowl combine the flour, basil, and salt then set aside.

Heat a large cast-iron skillet over medium heat, then melt 2 tablespoons of butter. Season your pork chops with the Herbs de Provence, salt, and pepper. Cook 7-10 minutes per side, or until browned but slightly pink in the center and an instant-read thermometer inserted into the thickest parts registers at least 145 F.

Add the remaining tablespoon of butter as needed so that about 3 tablespoons of drippings remain in the skillet when the chops are done. If the skillet is a little dry, even with the addition of butter, feel free to add a little olive oil as necessary. Transfer the chops to a plate, cover with aluminum foil, then allow to rest while you prepare the gravy.

Stir pepper into the skillet with the drippings and cook for 1 minute. Stir in the flour mixture and continue cooking, stirring constantly until browned, about 2 minutes. Add milk and cook, stirring constantly until the mixture is thick and bubbly, roughly 4 to 6 minutes.

Pour the sauce over the chops and serve.
