Salisbury Steak Meatballs

Several years ago I came across a Salisbury Steak recipe in Cooking Light that I loved. The only part I didn’t love was how much grease splattered onto my stove and countertop, so my solution is Salisbury steak meatballs! While the meatballs bake in the oven I prepare my gravy and mashed potatoes on the stovetop. Roughly 40 minutes later dinner is ready, and the stove isn’t covered in grease!

Serves 4 (16-18 meatballs)

Ingredients

Meatballs

1 lb ground beef (85/15)

1/3 c Italian breadcrumbs

1 large egg, lightly beaten

1 1/2 tsp Worcestershire sauce

1/2 tsp salt

1/4 tsp black pepper

Gravy

8 oz package mushrooms, sliced

small onion, thinly sliced

2 tbsp butter

1/2 tsp minced garlic

1 tbsp all-purpose flour, or Wondra

1 c beef stock

1 tsp Worcestershire sauce

1/2 tsp Gravy Master (optional)

Preparation

For the Meatballs:

Preheat your oven to 350 F. In a medium bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, salt, and pepper, either by hand, using a fork, or by using an electric mixer using dough hook attachments.

Next, form your meatballs using either a tablespoon or small ice cream scoop. You should come away with approximately 16-18 meatballs. Bake for 30 minutes.

For the Gravy:

While your meatballs are baking away in the oven, prepare your gravy.

Place a large non-stick pan on the stove over medium-high heat, then once hot, add your mushrooms and cook until browned. Next, add your sliced onions, and once translucent, add your butter. When the butter is melted, add your flour and stir until you no longer see any raw flour, then add in your beef stock, Worcestershire sauce, and Gravy Master (if using). Allow this mixture to bubble away for 5-10 minutes until thickened.

Putting It All Together:

Once the gravy is done and your meatballs have come out of the oven, add the meatballs to the pan and coat with the sauce and serve. If you want to give this meal a retro TV-dinner vibe, then I recommend serving up your Salisbury steak meatballs with mashed potatoes and peas.
