Cajun butter salmon is one of those quick and easy dinners that work well for weeknights or any time where the very idea of cooking makes you want to shriek… it also helps if you happen to like salmon. In the interest of keeping this dinner simple, while the salmon was baking in the oven I made some white rice flavored with butter, garlic salt, and pepper, then warmed up a can of cut green beans.

Prep Time 5 minutes
Cook Time 25-30 minutes
Serves 4
Ingredients
1 lemon, sliced into rounds
1 1/2 lbs salmon fillet
salt and black pepper
2 tbsp. melted butter
a clove of minced garlic
1 tbsp. whole-grain mustard
1 tsp. Cajun seasoning
1/4 tsp. dried thyme
Preparation
Preheat oven to 350 F, then line a large baking sheet with foil, preferably non-stick. Lay lemon rounds in an even layer in the center of the pan, then place salmon on top and season with salt and pepper.
In a small bowl, combine melted butter, garlic, mustard, Cajun seasoning, and thyme, then brush all over the salmon. Bake until the salmon is cooked through, about 25-30 minutes.
Serve your cajun butter salmon hot with whatever easy side dishes you desire.
