Simple Creamed Spinach

Simple creamed spinach is a very easy dish to dress up some frozen spinach. If you need to let this sit while you prepare other dishes, turn it off when completed, then when ready to serve, gently warm it through on the stove with a splash of cream, half & half, or milk.

For other side dishes, try my carrot and sweet potato mash, cheddar mashed potatoes, or easy rice pilaf.

Prep Time 5-10 minutes

Cook Time 10 minutes

Serves 3-4 people

Ingredients

2 tbsp unsalted butter

1 clove of garlic, minced

Pinch of nutmeg

2 tbsp all-purpose flour

1/4 cup heavy cream

1/2 cup half & half

1/4 cup grated parmesan

Salt and Pepper, to taste

10-oz package frozen, chopped spinach, thawed and squeezed dry

Preparation

Melt butter in a small saucepan over medium heat. Add garlic, nutmeg, and flour then whisk until light brown, about a minute or two. Next, gradually whisk in heavy cream and half & half. Continue to cook, whisking constantly until the sauce begins to thicken, which should take roughly 2 to 3 minutes. Season your sauce with salt and pepper, then add parmesan and mix together for another minute until nice and smooth. Finally, stir in your thawed and thoroughly squeezed dry spinach and mix until well combined and heated through.

Serve your simple creamed spinach immediately, preferably with a nice steak and good red wine.
