Creamy Banana Oatmeal

I first made this creamy banana oatmeal on a cold winter morning, but I also make this when I (1) have a little extra time, and (2) need a little self-care. I tend to use a 65/35 mix of water to milk when preparing this breakfast, but if you prefer 50/50, go with it. I’m happy to report this is equally delicious using either whole milk or almond milk. I tend to use unsweetened, plain almond milk in my kitchen. The blackberries I had on hand helped make the picture cuter.

Serves 4

Ingredients

2 c water

1 c milk

1 1/2 c old fashioned oats

a banana, sliced

1/2 c raisins

maple syrup or brown sugar, for serving

chia seeds, for serving

Preparation

Heat the water and milk in a medium saucepan until it starts to simmer. Add the oatmeal, bring to a boil, then lower the heat and simmer for roughly 5 minutes, stirring occasionally until thickened. Turn off the heat, then add the sliced banana and raisins. Place the lid on the pot and allow to sit for 2 minutes, then serve your creamy banana oatmeal nice and hot with maple syrup or brown sugar. Feel free to add some chia seeds, walnuts, pecans, or any other of your favorite oatmeal toppings.
