Soft-Baked Chocolate Chip Cookies

I love a cakey cookie, and that’s what these soft-baked chocolate chip cookies are… soft pillowy cookies of chocolaty goodness. I sometimes decide to be bougie and use vanilla bean paste instead of extract, but either way, they are wonderful. This is a small batch, but can easily be doubled. This recipe uses half of a 12-oz bag of chocolate chips. Also, this dough freezes very well. I wound up baking 9 immediately then froze the other 9 for a rainy day.

Makes 15-18 cookies

Ingredients

1 1/4 c all-purpose flour

2 tbsp instant vanilla pudding mix

1/2 tsp baking soda

1/4 tsp salt

1/2 c (1 stick) unsalted butter, softened

1/3 c brown sugar

2 tbsp granulated sugar

A large egg

1 tsp vanilla extract

1 c semi-sweet chocolate chips

Preparation

In a medium bowl mix together the flour, pudding mix, baking soda, and salt, then set aside.

In a large bowl, cream together the butter, brown sugar, and granulated sugar with an electric handheld mixer until light and fluffy. Add the egg and vanilla extract and mix to incorporate.

Combine the dry ingredients and chocolate chips with your wet ingredients and mix just until they are incorporated. Cover your bowl with some plastic wrap and place in the fridge for 30 minutes.

After 30 minutes, using a cookie scoop or a tablespoon, scoop out generous portions of cookie dough and place them on a plate. (Using my scoop I made 18 cookies.) Place back in the fridge for another 30 minutes.

Preheat your oven to 375 F and prepare your baking sheet with parchment paper, a Silpat, or some non-stick foil, and set aside.

Bake 10-15 minutes, or until lightly golden around the edges. (My cookies were done in 14 minutes.) After taking them out of the oven, allow them to cool on the baking sheet for about 5 minutes, then transfer to a cooling rack where they will continue to cool for another 5 minutes before digging in.
